Here it is again! Lovely dahl for dinner tonight. I thought it was about time I put the recipe up. There are lots of ingredients but it is really easy to make.
25g butter
2 cloves garlic
1 onion, finely chopped
1/2 tsp tumeric
1 tsp garam masala
1/2 tsp chilli powder
1 tsp ground cumin
1 x 400g can chopped tomatoes
175g red split lentils
2 tsp lemon juice
600ml vegetable stock
1 can coconut milk
1. Melt the butter in a large saucepan and saute the garlic and onion for 5 minutes.
2. Add the spices and cook for a further minute.
3. Stir in the tomatoes, lentils, lemon juice, vegetable stock and coconut milk and bring to the boil.
4. Reduce the heat and simmer for 25-30 minutes until the lentils are tender.
5. Season to taste and serve with naan bread.
