The market stall had big bags of parsnips for only 50p and knowing that I wanted to roast some over the weekend I bought them. Unfortunately there were only three of us for dinner on Saturday and there was plenty of other food which meant that there were a lot of left over parsnips. I searched BBC Good Food for parsnip recipes this morning and came up with this one.
Mr VST finished work at lunch time and cycled 34 miles home which meant that he was home early this evening and was hungry too. I planned on (and did) a run after work so he decided that as the recipe was at his level of cooking ability he would make the soup.
It was really yummy and flavoursome. The only thing missing was the coriander seeds.
