River Cottage: Vegeree

Final River Cottage recipe of the week was 'Vegeree' a vegetarian alternative to kedgeree I guess. 

 The recipe was very easy to follow, you just roast up some onions, aubergine and courgettes with 'one tablespoon of curry powder' and then add some cooked rice and boiled eggs. 
I had some garam masala and cumin which I used instead of curry powder, I think I'd used more than a tablespoon next time because the flavour didn't come through very well. It was a nice meal though.

Curry

Wednesday evening saw the return of a veggie packed curry with lentils. I make it with Patak's Rogan Josh curry paste but I'd love to make my own from scratch, hmm, another thing to add to my list of things to make next week......

Curry

Another Monday, another curry, so easy! Just cook up the veggies left in the fridge, add some Patak's Rogan Josh paste, a can of coconut milk and some lentils and hey presto!

Stuffed Squash

More donations from my colleague's garden for dinner today. I was given two squash. I am yet to identify them but they were light green on the outside and creamy white inside, they were like a marrow or courgette. 

I fried off some shallots, garlic, celery and mushrooms and mixed this in with some basmati rice and feta cheese. The results were surprisingly tasty.

Easy Veggie Curry with Lentils

Made a quick easy veggie curry and threw in some lentils to bulk it out. Unfortunately I managed to kill my weighing scales with banana juice so I couldn't weigh the rice and I guessed the amount of water too. The result wasn't pretty but edible.

Mushroom One Pot

I had an afternoon off work today and spent it making delicious things for the weekend at least I hope they are delicious. It's Mr VST's birthday a week on Monday but we're celebrating this weekend as we're at a wedding next weekend. We're planning a barbecue on the beach and the weather seems to be on course to oblige. I found this recipe for portobello burgers which look awesome and have got the ingredients ready for those, including some pesto mayo with Mr VST's home made pesto and I've had a go at making my own ciabatta too!

As I had been slaving away all afternoon I wanted something quick and easy for dinner. I popped this in the oven before going out for a lovely run in the sun.

Paula Radcliffe and Mushroom One Pot!

A slightly un-food related post for yesterday. As I said on Sunday I made two dinners as Mr VST and I were off to meet Paula Radcliffe on Monday evening - Whoop!

I made an easy, filling, old favourite Mushroom One Pot  which we warmed up when we got home.

What a lovely lady she is. She patiently sat and answered questions for about 3/4 hour and then took us all out for a 5k run - awesome!

Mushroom One Pot

Made a regular favourite this evening, Mushroom and Rice one-pot. Very easy and tasty. I actually followed the recipe this evening as I haven't made it in a while. I even rinsed the rice properly before I put it in the pot. This meant that the texture of the rice was completely different. I think Mr VST and I prefer our sticky rice!

Aubergine, mushroom and green lentil curry

I had a curry planned for Wednesday night's supper anyway and had planned the usual mix of veggies but when I came to make it I realised that I had done nothing with the bonus bag of cheap mushrooms I had bought last week and they weren't looking great. I also had managed to buy two aubergines and had no specific auberginey plans meal wise and I had mistakenly opened a can of green lentils instead of chickpeas for my chickpea stirfry. I made my curry in the usual way with some rogan josh curry paste and a can of coconut milk. It was good, a few more calories per portion than the usual but mush bulkier and more filling.

Mushroom and rice one-pot

Tuesday I had planned on running in the evening and so had arranged for Mr VST to make us some mushroom and rice one pot to eat on my return. Instead I got called out, got back at about 6.15pm, waited for the one pot to cook, went back to my call out and didn't return until 10pm. Not the evening I had planned but the food sustained me.

It's just so easy to make that I made it again this evening.

New recipe books arrived finally. The postman kindly left them on the doorstep in the rain but they seem to have survived in tact apart from a few wobbly pages.

Mushroom and rice one-pot

Mr VST made dinner for the second night in a row - a first I think! He was heading out at 6.30pm and wanted to eat before he left. I wanted to go for a run straight from work so he made us some mushroom one pot. He was challenged with limited ingredients as there was only one pepper in the fridge. It still tasted great though.

Curry made with everything in the fridge!

I knew I had some veggies in the fridge and I thought I had enough for a curry but when I got in there as well as the usual pepper, courgette and aubergine there was a lonely parsnip and sweet potato too. I added all this to the mix with some mushrooms and then, not content with using everything floating around the fridge, I delved into the freezer to use up half a can of chickpeas that I had frozen (other half used in lentil soup). It was a great mix, I added the usual korma curry paste and all tasted good!

Veggie curry

I'm sure I heard recently that people eat the same eight meals over again. I think we to tend to come back to certain meals and this curry is one of them. So easy to make, filling, light on calories and tasty too. The original recipe came from this one-pot mushroom and potato curry. I now make it with whatever vegetables are left in the fridge, tonight's were aubergine, mushrooms, sweet potato, courgette and peppers and I put some Quorn chicken style pieces in there too. I'm making it with korma curry paste at the moment but the rogan josh is much better.
