The Lounge, Bristol
Right! I've finally got the netbook back from Mr VST who has been using it to order himself, well us, a new iMac as his laptop has broken. So back to last Saturday. I met up with some of my school friends in Bristol and we went for a late lunch/early supper at The Lounge in Bristol. There are quite a few 'lounges' around Bristol and I used to live near the Porto Lounge. It was great for breakfasts and brunches.

Curry
Wednesday evening saw the return of a veggie packed curry with lentils. I make it with Patak's Rogan Josh curry paste but I'd love to make my own from scratch, hmm, another thing to add to my list of things to make next week......

Curry
I am trying to eat healthily this week, lots of veggies, they always make me feel better. I love this easy curry, rogan josh curry paste, a load of veggies, a can of coconut milk and a can of lentils and hey presto! A delicious and healthy meal.

Curry
A simple curry for dinner this evening which was what I needed as I was playing with the plum and apple leather, making the pastry for tomorrow's beetroot and onion tart and also a quinoa, beetroot and feta salad - phew!

Easy Veggie Curry with Lentils
Made a quick easy veggie curry and threw in some lentils to bulk it out. Unfortunately I managed to kill my weighing scales with banana juice so I couldn't weigh the rice and I guessed the amount of water too. The result wasn't pretty but edible.

Veggie Curry with Quorn Pieces and Green Lentils
Well it's national vegetarian week this week and Twitter is all a-twitter with it. It is an extra special meat free Monday today but I've gone with an easy vegetable curry.
I usually make it by frying off whatever vegetables are in the fridge and adding a tablespoon of curry paste and a can of coconut milk and letting it all bubble away for 10-15 minutes and it works!
When I went to get some coconut milk I was informed by a sign on the shelf that there was a worldwide shortage of coconut milk. I am sure (and will have to check tomorrow) that the 'Continental Stores' over the road from work has a healthy supply. Anyway as I was at the other end of town when I went to get it I decided to try out some creamed coconut instead. You just add water to the block of creamed coconut and hey presto. The result is very similar to coconut milk but it has a grainy texture.
I have also been concerned that we don't eat enough lentils, beans etc so I added a can of green lentils. It made a hearty, filling curry.
Can I also add that for lunch today I had a left over leek parcel and leftover spinach and potato bake, I'm sure they were both better today!

Curry
Had the same meal two nights in a row! Curry. Packed full of healthy veggies and tasty too. I made my usual sized portion but we didn't eat the left overs for lunch so had them for dinner instead.
Bought the (full-fat) naan breads from the supermarket and froze them a while ago. Somehow they managed to taste of nothing at all! Might have to find a recipe and make my own next time.

Friday Night Curry
An easy cook on Friday night. Everything that was left in the fridge went into the curry! It was an interesting mix of mushrooms, aubergine, sweet potato and spinach.

Aubergine, mushroom and green lentil curry
I had a curry planned for Wednesday night's supper anyway and had planned the usual mix of veggies but when I came to make it I realised that I had done nothing with the bonus bag of cheap mushrooms I had bought last week and they weren't looking great. I also had managed to buy two aubergines and had no specific auberginey plans meal wise and I had mistakenly opened a can of green lentils instead of chickpeas for my chickpea stirfry. I made my curry in the usual way with some rogan josh curry paste and a can of coconut milk. It was good, a few more calories per portion than the usual but mush bulkier and more filling.

Another Monday another curry
It's just so easy to make that I made it again this evening.
New recipe books arrived finally. The postman kindly left them on the doorstep in the rain but they seem to have survived in tact apart from a few wobbly pages.

Curry made with everything in the fridge!
I knew I had some veggies in the fridge and I thought I had enough for a curry but when I got in there as well as the usual pepper, courgette and aubergine there was a lonely parsnip and sweet potato too. I added all this to the mix with some mushrooms and then, not content with using everything floating around the fridge, I delved into the freezer to use up half a can of chickpeas that I had frozen (other half used in lentil soup). It was a great mix, I added the usual korma curry paste and all tasted good!

Veggie curry
I'm sure I heard recently that people eat the same eight meals over again. I think we to tend to come back to certain meals and this curry is one of them. So easy to make, filling, light on calories and tasty too. The original recipe came from this one-pot mushroom and potato curry. I now make it with whatever vegetables are left in the fridge, tonight's were aubergine, mushrooms, sweet potato, courgette and peppers and I put some Quorn chicken style pieces in there too. I'm making it with korma curry paste at the moment but the rogan josh is much better.

Curry
