Mushroom and Rice One Pot

Mushroom and Rice One Pot last night once again made by Mr VST. No pictures I'm afraid as I totally forgot in all the excitement. My sister in law gave birth to a beautiful baby girl last night so we were somewhat distracted!

Summer Lasagne

I found this lovely looking recipe for 'Cheat's Mushroom and Spinach Lasagne' on the Cook Vegetarian website. Having made it and found it to be light and tasty I have renamed it Summer Lasagne.

I followed the instructions but layered in my own way and misread the bit about the tomatoes so, having layered it all without the tomatoes, I pulled it all apart again and just put them in without having reduced them.

I was then very sceptical about the outcome but was pleasantly surprised. The only think I would do differently is double the filling, well not the tomatoes but certainly the spinach and mushrooms as the flavours didn't come through very strongly. The 'cheat's' cheese sauce was really nice, it was just seasoned crème fraîche but  I think it was the nutmeg that made it.

I served it with some boiled new potatoes. I have to write about them because they were absolutely delicious.  They came from the market stall as usual and were labelled as Devon new potatoes. They came all covered in dirt and were so light and creamy that no butter was necessary at all.

Mushroom One Pot

I had an afternoon off work today and spent it making delicious things for the weekend at least I hope they are delicious. It's Mr VST's birthday a week on Monday but we're celebrating this weekend as we're at a wedding next weekend. We're planning a barbecue on the beach and the weather seems to be on course to oblige. I found this recipe for portobello burgers which look awesome and have got the ingredients ready for those, including some pesto mayo with Mr VST's home made pesto and I've had a go at making my own ciabatta too!

As I had been slaving away all afternoon I wanted something quick and easy for dinner. I popped this in the oven before going out for a lovely run in the sun.

Leek, Chestnut Mushroom and Feta Filo Parcels

Friday night supper consisted of a slightly adapted version of these 'strudels' made with feta. I served them with a mountain of broccoli and roasted, salted, new potatoes. The parcels were good and the roasties were awesome.

Yummy filling, still need to work on my folding technique though.

Broccoli and roasty mountain!

Paula Radcliffe and Mushroom One Pot!

A slightly un-food related post for yesterday. As I said on Sunday I made two dinners as Mr VST and I were off to meet Paula Radcliffe on Monday evening - Whoop!

I made an easy, filling, old favourite Mushroom One Pot  which we warmed up when we got home.

Here's Paula!

What a lovely lady she is. She patiently sat and answered questions for about 3/4 hour and then took us all out for a 5k run - awesome!

Leek and Mushroom Strudels with Roasted New Potatoes

My second attempt at this meal was more successful as there was no alcohol involved! The parcels are really tasty and easy to make, sorry strudels. I used the left over feta cheese from the frittata earlier in the week and I didn't have quite enough leeks but they were still really tasty.

Heart shaped roastie - awww!

Mushroom and rice one-pot

Tuesday I had planned on running in the evening and so had arranged for Mr VST to make us some mushroom and rice one pot to eat on my return. Instead I got called out, got back at about 6.15pm, waited for the one pot to cook, went back to my call out and didn't return until 10pm. Not the evening I had planned but the food sustained me.

Mushroom and rice one-pot

Mr VST made dinner for the second night in a row - a first I think! He was heading out at 6.30pm and wanted to eat before he left. I wanted to go for a run straight from work so he made us some mushroom one pot. He was challenged with limited ingredients as there was only one pepper in the fridge. It still tasted great though.

'Twas the night before Christmas...

..and all through the house lots of creatures were stirring and having a mini Christmas!

We had a mini Christmas with my brother on Christmas Eve because he was spending Christmas day with his girlfriend and her family. Our Christmas Eve included a lovely meal, present swapping and a game of Who Wants to be a Millionaire (girls vs boys, the boys won :()

The meat eaters had smoked salmon fillets and the veggies had leek, mushroom and goat's cheese strudels. This was all cooked by my wonderful mother but the recipe for the veggie strudels was from BBC Good Food and can be found here. Both options were served with roasted new potatoes and green beans.

...and for pudding a lovely trifle. It was a Delia recipe with bananas in and home made custard.

We didn't forget Father Christmas of course and left him some Bailey's, a home made sweet and one of my cinnamon mince pies as well as a carrot for Rudolph.

Mushroom and rice one-pot

Wow it really is cold out there tonight! I had a bit of an adventure out there in the cold while Mr VST made us a lovely Mushroom and Rice One Pot. Just what I needed when I got back.

Mushroom and rice one-pot

Mr VST made us this mushroom and rice one pot for dinner this evening. I was on duty today and got very hungry during my call out even though I took a cheese and pickle sandwich and some jaffa cakes with me. Last time we had this I posted the photo from the BBC Good Food website but here is our version all ready for tomorrow's lunch:

I'm also really enjoying my mince pies already this year. I bought some over the last few weeks but got some jars of mincemeat so the next ones should be at least half home made.

Mushroom and rice one-pot

This evening's meal was made by Mr VST. I found it in the Spring on the BBC Good Food website when looking for low calorie, low fat, vegetarian meals so that we could get  in shape for our wedding. It is really easy to make and under 300 calories per serving. Mr VST said that the most difficult thing about making it this evening was finding the recipe. I had helpfully got another mushroom recipe out when I had in fact copied this one into my recipe book!

Our version never looks quite like it does on the website but its tasty just the same.

The recipe is here
