River Cottage: Vegeree

Final River Cottage recipe of the week was 'Vegeree' a vegetarian alternative to kedgeree I guess. 

 The recipe was very easy to follow, you just roast up some onions, aubergine and courgettes with 'one tablespoon of curry powder' and then add some cooked rice and boiled eggs. 
I had some garam masala and cumin which I used instead of curry powder, I think I'd used more than a tablespoon next time because the flavour didn't come through very well. It was a nice meal though.

River Cottage Seasonal Chutney

Apple recipe number 3,672! River Cottage seasonal chutney with courgettes, tomatoes, cooking apples, raisins.

 I managed to fill the flat with vinegar vapours, which were quite persistent!
 Have to wait 8 weeks now before trying it....
...not sure Mr VST can wait that long.

Creamy Lemon and Vegetable Linguine

I came across this recipe on the ezrapoundcake blog yesterday and thought I'd make it seeing as the portobello mushroom burgers were so successful. Unfortunately the lemon was over powering and the meal made me feel more than a little nauseous. Such a shame as it looks like it should be really tasty and its healthy and low calorie too.

Roasted Butternut Squash with Feta Cheese

The weather was gorgeous today and not really the kind of weather that makes you want to spend much time in a hot kitchen. Mr VST had requested this meal at the weekend and I had already bought the ingredients so I made it anyway. It is a really healthy, filling meal, especially served with roast potatoes.
