Balsamic Honey Quorn Fillets

They had sweetcorn on the market this week, 50p each, still in the husks. They are a favourite of Mr VST's and so we had these yesterday with some tasty quorn fillets with a balsamic honey glaze. Of all the Quorn products I find it most difficult to cook with the fillets but this recipe is always a winner.
Ingredients:
6 Quorn Fillets
2 cloves garlic
4 1/2 tbsp runny honey
1 1/2 tbsp lemon juice
3 tbsp balsamic vinegar
1 tsp mustard (optional)
1. Heat a small amount of oil at a medium heat in a pan and saute the garlic and fillets, turning once, so that they brown lightly on both sides.

2. Add the honey and lemon juice and continue to cook until the honey reduces and becomes sticky again (5-10 mins).

3. Stir in the balsamic vinegar and shake the pan well until the fillets are covered. Allow the glaze to bubble and reduce slightly more (about three mins) and serve.

Cream Cheese and Sweetcorn Toastie

The toastie revival continues this weekend with the return of an old favourite. Lighter than it's cheddar counterpart and creamy but it still has volcanic temperatures inside!!

Spinach and Sweetcorn Pancakes with Cheese Sauce

My cheese sauce for the Cauliflower and Broccoli Cheese on Monday was made with Oat milk. Mr VST made a disparaging comment about the appearance of the sauce although nothing bad about the taste. Anyway this was enough for me to pick up some goat's milk on the way home to make the cheese sauce for the pancakes. I also used it for the pancakes although I think I'll be using good old cow's milk for pancake day next week. I served my lovely pancakes covered in cheese sauce with jacket potatoes.

Improvised quorn mince cottage pie

In the meaty world Cottage Pie is made with minced beef and Shepherd's Pie with minced lamb. In the veggie world there are numerous options for fillings. There are lots of lentil Shepherd's Pie recipes out there but I make mine with quorn or realeat mince.

When I went to get the mince out of the freezer tonight I realised that there wasn't enough. A quick rummage in the cupboards and I found a can of three bean salad to bulk out the filling. Unfortunately beans don't soak up the gravy as well as the mince does so it wasn't as tasty as usual.
