Pasta Bake

Eeek! Going back to 16th October here. We had a jar of River Cottage tomato purée left over from the tomato risotto that I had made. 

I cooked up some veggies and some veggie sausages and mixed them together with cooked pasta and then popped the lot in the oven with some cheese on top. 
It was a great pasta bake even if I say so myself.

Hadn't made this one in a while but it was lovely on Thursday evening. The Italian style Linda McCartney sausages are great in this dish.

Roasted Vegetable Pasta Bake

After having such a crazy weekend I hadn't managed to plan our meal for the week. I found myself with a load of veggies but not wanting to make another curry or Mexican. There was also a tub of crème fraîche in the fridge. I decided to roast up the veggies, you can't really go wrong with roasted veggies, and mix them with some cooked pasta and top with cheat's cheese sauce from the Summer Lasagne recipe.

You take 300ml of crème fraîche, season it, grate some nutmeg in and grate about 50g mature cheddar into it and mix.

I mixed up the roasted veg and cooked pasta with a tin of tomatoes, spread the crème fraîche mix on top, added a bit of extra grated cheese and popped it in the oven for about 15 mins.

Pasta Bake

After a week of living pretty much on cake and toast I decided on Sunday evening that an injection of vegetables was necessary. Inspired by the Summer Lasagne I cooked up some veggies and mixed them with a tin of tomatoes and then layered those with some cooked pasta and the lovely crème fraîche with nutmeg mix. It was great!

Freestyle Pasta Bake

I wasn't quite sure what to make for dinner on Thursday so I drew inspiration from tomato and sausage pasta bake and the Summer Lasagne I made earlier in the week. So I grilled some Linda McCartney Italian Style sausages.....



...put some nutmeg and black pepper into the left over crème fraîche.


...stir fried the veggies that were in the fridge, courgette, a pepper and half an aubergine and added a tin of tomatoes...


...then I mixed them together with 250g of cooked pasta, put the crème fraîche on top and grated some mature cheddar on the top and put it under the grill. It was good!
