Big Veggie Breakfast with the Family

My Mum, her partner and my little sister have been in France for the last two weeks. Their ferry got in at 7.30am this morning and our place was on their way home so they popped in for breakfast. We started with Mr VST's home made granola, which went down very well and then followed this with some potato waffles (I'd like a recipe to make these myself), home made baked beans, real bread toast, scrambled eggs and Linda McCartney vegetarian sausages. It all went down well with a pot of French coffee and several pots of Earl Grey tea.

After that lot we were quite full up. We had a nibble on some delicious orange dark chocolate the Mum had brought back for us and went to visit Mr VST's brother, wife and our new niece. We went for a lovely stroll with them and had lots of cuddles and an ice cream. When we got back I had some cheese and crackers and Mr VST made himself easy macaroni cheese, cooked pasta with grated cheese mixed in, both lovely.

Home Made Baked Beans

A few weekends ago for lunch Mr VST and I had baked beans on toast. The toast was my home made real bread that had been toasted. The baked beans were my usual supermarket value brand. Baked beans are one of those things that people seem to like a particular brand of and I was brought up on these and have always defended them against other brands. Anyway on top of my real bread toast they suddenly seemed a bit pale, too sweet and the sauce too gooey so I decided to make my own.

The starting point was trying to find some haricot beans. There were none in the supermarket or the wonderful 'Continental Stores' and I happened on some in a fantastic independent health food shop last weekend. I soaked the dried beans overnight and then boiled them, I wish I'd boiled them for a bit longer. Anyway, I had a recipe in a recipe book, which was very simple, just beans, water, cider vinegar, tomato purée and molasses.

I found  a few other recipes online that inspired me, there was one from Tana Ramsey and another by Angela Boggiano. In the end, with 500g of beans, I put in one finely chopped onion, a clove of garlic, minced, a tablespoon of soy sauce, two teaspoons of paprika, one tablespoon of dark molasses sugar, a tablespoon each of olive oil and cider vinegar, three of tomato purée, a can of chopped tomatoes, a teaspoon of cumin and quarter of a teaspoon of mild chilli powder.

As directed in the original recipe book I then put all of these in a pot in the oven at 110 degrees Celcius for four hours.

I thought that the beans would cook some more in the oven but unfortunately they didn't. This meant that when they came out they were still a bit undercooked for my liking and so needed boiling again, which I think was what destroyed all the flavour (boo hoo). We tested them out in the way baked beans should be, on toast and a jacket potato.

With the remaining beans I boiled them up and then added some more soy sauce, cumin, molasses sugar and paprika. I had them for lunch the next day and they were great!

The Hungry Fox, Broadclyst Station

Mr VST and I cycled out to Broadclyst in search of a possible new home this evening. It was a good cycle, about 35 minutes to get there, a bit of pottering around and then we stopped at The Hungry Fox in Broadclyst Station for some supper. The reviews online weren't all that great but it appears that a new chef took over towards the end of last year and promised great things. Sadly not so for vegetarians. Not even the option of the ubiquitous goat's cheese and caramelised red onion tart. There was the choice of 'light bites' of leek and potato soup or mixed bean salad and then a selection of baguettes or sandwiches or jacket potatoes. We went for a jacket each with cheese and beans, it also came with a salad. It was nice as far as jacket potatoes go. To be honest I enjoyed my cycle ride more than I enjoyed the meal. Oh well.

Bangers, Mash and Baked Beans

Can I start by saying that the macaroni cheese with leeks worked and that I successfully completed the Great West Run today - Whoop! Thirteen and 1/10th of a mile in 2 hours, 9 minutes and 16 seconds. Having given a lot of thought to what I wanted to eat before the run it didn't occur to me that I might want to plan something for afterwards as well.

When we eventually got out of the car park and got home Mr VST and I finished off the macaroni cheese. For dinner I decided that I would stick with the easy to cook, easy to eat,  nursery food theme and went for bangers and mash with baked beans.
