Quorn Tortilla Stack, Potato Wedges, Houmous and Refried Beans

Exactly what it says in the title. Quorn mince tortilla stack. Thought I'd put the recipe up as I've made it quite a few times now and it's a good one. I guess it could be made with real mince or soya mince too. 

Ingredients:
300g Mince of your choice
1 small onion, finely chopped
1 clove garlic, minced
2 tsp ground paprika
1 tsp chilli powder
400g chopped tomatoes
2 tbsp tomato puree
1 tbsp soy sauce (or vegetarian Worcestershire sauce)
4 soft flour tortillas
50g mature cheddar cheese


Method:
1. Pre-heat oven to 200 degrees celcius/400 farenheit/gas mark 6.
2. Heat a little oil in a frying pan until hot, cook the onion and garlic for 5 minutes.
3. Add the mince, paprika, chilli powder, chopped tomatoes, tomato puree and soya sauce and season.
4. Simmer for 10-15 minutes.
5. Place a large tortilla on a large non-stick baking tray, spoon over a portion of mince mixture. Repeat with the remaining tortillas and mince and then add the cheese on the top of the final tortilla.
6. Bake for 10 minutes, cut into quarters and serve.

Quorn Tortilla Stack with Spicy Sautéed Potatoes

On Tuesday I made a lovely Quorn Tortilla stack. I only had new potatoes so I sliced them up and sautéed them with some cumin, tumeric, chilli powder and paprika, yummy!

Quorn Tortilla Stack with Potato Wedges and Salad

I love this easy tasty recipe. Its nice to do something different with quorn mince than a spag bol or cottage pie.  I thought I may have gone over the top with the spices today but all was well!

 

I accompanied the stack with some home made potato wedges. I made them smaller than usual and par boiled them so that they cooked quicker - it worked!
