Belly Timber, Falmouth

On Friday (30th Sept) Mr VST and I went down to Cornwall to stay with our friends and for dinner we had take away pizza. This isn't just any take away pizza oh no, this was pizza described by one of our hosts as giving him a 'semi' the last time he ate it!!

I can't say that I was sexually aroused but it certainly was amazing pizza. I went for a roasted aubergine and garlic pizza, I think it was the best I've ever tasted. Absolutely delicious. I can't find a number for them or a link to a website but if you're in Falmouth and you happen across Belly Timber then I highly recommend it.

Dustbinlid Pizzas

Saturday evening my brother came down to stay with us for the weekend. We thought we'd take him out to see the famous dustbinlid pizzas from 'On the Waterfront'.

The giant pizza went down well with the onion rings, potato wedges, garlic bread and coleslaw.

Perfect Pizza

Mr VST had an interview for a promotion at work this week and he has therefore been very busy swotting up all week so I haven't seen very much of him. He said that he would treat us by taking us out for (his favourite) dustbin lid pizzas but I decided to treat him to some yummy home made pizzas instead.

A good test for my new olive wood rolling pin

This recipe is so easy and works every time. Mr VST added some mushrooms, sweetcorn and olives to the top of his. We had the first of the home grown salad leaves on the side. The pizzas were so big that the salads really were on the side, they had to have their own, separate plates!

Best thing about this recipe is that it makes four pizzas and there's only two of us which means there's more for tomorrow's lunch.

Carbo-loading with Pizza and Macaroni Cheese (with Leeks)

I've been reading over the race instructions for the Great West Run tomorrow and just realised that I should have been carbo loading for the last three days. Tonight's meal was planned, macaroni cheese with leeks but last night's pizza and garlic bread fest was a mistaken carbo load.

Mr VST had laser eye surgery yesterday and we were staying with friends nearby so that he could go back for his check up today. We had originally planned to have an Indian take away but we soon realised that, unless I was to spoon feed him, Mr VST probably wouldn't manage to eat curry, well at least not without making a mess and I'm pretty sure he didn't take a spare change of clothes!

I decided to go out for some frozen pizzas for dinner as these would be much easier, and less messy, for Mr VST to eat. Our lovely, patient, caring hosts already had some garlic bread in the freezer so my carbo loading started in earnest.

Moving onto this evening the macaroni cheese served the dual purpose of being very comforting following the surprising disturbance of being nurse/patient and also providing me with the carbs necessary for the run tomorrow.

When I was growing up my step-dad taught me how to make a very simple, and tasty version of macaroni cheese. It was one of the first meals I learnt how to cook. I was taught to cook a load of macaroni and then drain it and grate in a ton of cheddar, stir until the cheese melts, add ketchup and eat.

This evening I went for the more traditional version which involves the same cooking of macaroni but then adds the making of cheese sauce, adding a sliced leek to the sauce, mixing it all together, putting it into a dish and then grating a bit more cheese over the top before putting it in the oven.

It was inspired by this recipe from the BBC but I decided not to do all the faffing about with the infusing of milk etc and it was still pretty good. I have made it before but it's dangerously more-ish and loaded with calories so it is a rare treat.

So tomorrow I am due to run 13.1 miles eek! It is co-incidentally International Barefoot Running Day and although I won't be running completely barefoot I'll be running in my Vibram Five Finger Bikilas which is nearly as good. I'll let you know how it goes.

Perfect Pizza

I had planned for us to have pizzas tonight. They do take some planning if you are making the dough yourself, which I nearly did. I got Mr VST to make it yesterday evening and it rose beautifully and then kept well in the fridge before it was used this evening.

Dustbin Lid Vegetable Pizza

Now where did I leave off last week? Ah yes, Wednesday. I had a trial all day at work which left me quite tired and lazy so I decided to indulge Mr VST in the request he had been making for weeks that we go out for pizza. We strolled down to the quay and went to 'On the Waterfront' where they make delicious 16 inch 'dustbin lid' sized pizzas. We went for one of those covered in vegetables and a very flavoursome chutney (not how the Italians do it I'm sure!) and some beer battered onion rings which we delicious and filling. They meant that we had some pizza left over for lunch the next day.

Perfect Pizza

Ahhh Friday night at last! I have been looking forward to this all week! Not least because I had a massage booked in and by some miracle, even though I am on call, I have managed to have that massage and it was A-MAY-Zing!

Mr VST had proposed a pizza and beer evening down at the local watering hole tonight with it's 16 inch dustbinlid pizzas. As I thought that I probably wouldn't feel like it, am still calorie counting and we are saving I suggested instead that I make the pizzas and he buy himself some beers to bring home.

This pizza recipe was from the Times Online before it went all silly and demanded a paid subscription. The 'archive' is still there for free including this recipe. It really is very simple and delicious and Tesco were obliging yesterday with buy one get one free on balls of half fat mozzarella. I calculated these pizzas to be around 550 calories each. A very satisfying feed indeed.

Lunch with the in-laws

My stomach will soon be HUGE. I had my third multi-course meal in as many days for lunch today and am unable to run off the monster amount of calories due to the icy conditions. Back to low fat simple meals and no naughty snacks in January I think.

As a result of this I've only been able to drink tea and eat some gingerbread cake for dinner so I'll blog about my lunch instead.

To start we had crackers with mushroom pate and cream cheese, followed by homemade veggie sausage pizza with yummy potato skins and carrots and then apple crumble and custard to finish.

Some might think that this is a little strange. It is perfectly normal for Mr VST who is famous for his pizza and broccoli combo, now you know where he gets it from!

Dustbin lid pizza

Ate out this evening with old friends at On the Waterfront in Exeter. Mr VST and I shared one of their dustbin lid 16inch pizzas. Half vegetariana and half tomato free pesto, cheese and red onion. The vegetariana half was better. The beer battered onion rings were as good as ever.

We couldn't eat it all so brought the rest home for tomorrow's lunch.
