American One Crust Spiced Apple Pie

Another apple post as I am still trying to get through the mountain of cooking apples that Mr VST brought home from work. I love this pie, it's very easy to make and very tasty, once again the most annoying part is peeling, coring and chopping the apples. I am getting very tempted by one of Mr Fry's top gadgets, an apple peeler!

It's a Delia recipe so, of course, I didn't follow it to the letter, not least because she says to use lard in her pastry. I used half vegetable fat, half butter and made it in the food processor not by hand and still made lovely, light and crisp pastry.
So you mix the apple, sugar, raisins and spices together and lay them on top of the pastry and just gather in all the edges as roughly as you like (my kind of recipe).
You are then supposed to use crushed demerara sugar cubes on the top. I used the sugar, not from cubes and it still creates the same crunchy topping.
Then you bung it in the oven and bake and hey presto, a lovely apple pie.

Cinnamon, White Chocolate and Cherry Blondies

In my general wandering around the internet I came across the idea of blondies. When I ran this idea past Mr VST I explained that they were like brownies but without the dark chocolate, he could hardly comprehend such a thing. I explained that I would jazz then up with some white chocolate instead and he said no more. Having now tasted them he was VERY impressed. These are little squares of, sweet, gooey heaven. You have been warned, they are very more-ish.

I came across two recipes, hence my getting slightly mixed up. One on the Kitchinarian and one on Smitten Kitchen

113 grams butter, melted (random figure as it is one American 'stick'
218g light brown sugar(300g is too much! It makes them a bit too sweet even for a sweet tooth. I used this because I was trying to read from two recipes at the same time.)
1 large egg
1 teaspoon vanilla extract
125 grams plain flour
2 tsp cinnamon
100g white chocolate, chopped into chunks
75g fresh cherries, pitted, chopped into quarters

1. Butter an 8×8 pan.

2. Mix melted butter with brown sugar. I mixed this on the hob until the sugar dissolved.

3. Let the butter and sugar cool down (about 10 minutes) then beat in egg and then vanilla extract.

4. Stir in flour and cinnamon, then mix in chocolate chunks and cherries.

5. Pour into the prepared pan.

6. Bake at 170°C for 20-25 minutes, or until set in the middle.

7. Cool on rack before cutting them.

They were a little smaller than I had anticipated, they sunk down after coming out of the oven. Due to the amount of sugar I put in they were incredibly sweet though and a little square is really all you need.

Mince Pies with Cinnamon Pastry

And for dessert I had a fantastic combination of mince pie and custard. It was heaven, I've been meaning to have it since I made these on Sunday night and have been so busy that I've just gobbled down a mince pie on its own instead.

I was a little disappointed with my last batch of pies, the pastry was nothing special so having seen a recipe in the Sainsbury's magazine at the hairdressers that had ground almonds in it so I googled away and found this BBC recipe for Almondy Mince Pies. I still has a jar and a bit of Tesco Finest Mincemeat left to use and I wasn't that bothered by the almondy taste so I just used the pastry recipe and it is AMAZING! Cinnamon is my flavour of the Winter and it does make your mince pies a funny colour but it's worth it.

And here is my mince pasty - equally as delicious!

Breakfast

Now I really don't intend on blogging my breakfast everyday as I usually have the same thing - ready brek! Yes I know, central heating for kids and I'm definitely not a kid any more but it's great. It really sets me up for the day. The current incarnation involves topping it with sultanas, a generous teaspoon of honey and cinnamon.

Difficulty: Easy peasy!

Taste: simple but delicious

Calories: 300 kcal approx. (I make mine with oat milk but don't think it's that different from semi-skimmed cow's milk in terms of calories).
