Fusilli Bolognese

Had a surprise visit from the in-laws this evening. They emailed Mr VST this morning to say that they would be in the area and might pop in and see us. He specifically asked them if they wanted dinner and they said no. When they arrived I had already cooked dinner for Mr VST and I with enough left for lunch tomorrow. I didn't make a huge amount, just enough for healthy sized portions today and little ones for lunch. I didn't have enough linguine so I cooked up some fusilli as well. Mr VST got hungry while they were here so then asked them if they wanted to eat with us which of course they did. Small portions of fusilli bolognese were had by all. Thankfully I had taken some rhubarb cake out of the freezer on Saturday to see us through the week and so we had that for pudding with custard as well.

Rhubarb Cake

Local rhubarb on the stall this week, a big bunch was only a pound, I couldn't resist. I was especially pleased when I remembered how easy it was to make this recipe

Mix up the flour, butter, sugar, eggs and vanilla extract

Chop up the rhubarb and add some lemon juice
There are a couple of steps in between but you end up with a light vanilla sponge contrasting with the slightly tart rhubarb and then a little ginger kick on top. De-licious even if I do say so myself.

Vegan Chocolate Blueberry Cake

Trying to satisfy my sweet tooth in a low calorie way is sometimes difficult. I came across the Fat Free Vegan Blog and the picture on the top of the amazing looking cake on the top banner. I found the recipe for it in the top ten recipes of 2010 section and as I had most of the ingredients at home or good substitutes. Blueberries were on special offer but still massively expensive but hey-ho, anything in the name of sweet-toothedness. The recipe was VERY easy to make. I may have overcooked it slightly in my fan assisted oven. It was a little dry. Mr VST had his second slice with some ice cream and liked it better than on it's own.
