Curry

A good 'curry' tonight packed full of veggies and quorn pieces. I just use a curry paste and coconut milk.

Linda McCartney Country Pie

I'm on my own this evening as Mr VST has gone to stay with friends before the Exmoor Beast tomorrow so I ventured into the freezer to find something for dinner tonight. Good old Linda. Love her veggie range. Had one of her country pies tonight with a jacket potato.
Lunch today was a bit more interesting. Carrot and parsnip soup with some Dr Karg's crackers and extra mature cheddar. A good winter warmer.

Will try and find the time to put some recipes up tomorrow.

Bangers and Mash

Tonight's dinner was another classic (I must find a more imaginative term!) Linda McCartney sausages, mashed potato, peas and Anna's onion gravy (recipe on the cottage smallholder blog in links).

You can see from the photo that the gravy really is the main part of the meal!

We now eat this with a knife, fork and spoon. Mr VST licks the plate behind my back. He says that the day he doesn't lick the plate I'll know I've made a bad batch - it hasn't happened yet!

A top chef that likes vegetarians - yipee!

So many people panic at the thought of catering for vegetarians. It was refreshing to read that Marcus Wareing,who trained under Gordon Ramsey (famous vegetarian hater) actually likes vegetarians and I quote from notquitenigella :

Daisy next to me is a vegetarian and Marcus says that he loves vegetarians. Pardon me? I almost have to ask. Many chefs are known (notoriously Gordon Ramsay who told people he’d like to throw them out of a plane) for disliking vegetarians but Marcus tells us that they have a special vegetarian degustation and want to give them the same quality of meal as an omnivore.

Dahl and Jammy Fairy Cakes

This evening saw the first appearance of a winter favourite in the vegetarian sweet tooth household - Dahl. I will try and put the recipe up over the weekend because it is really easy and tasty too.







It is Mr VST's 10,000 day birthday tomorrow and as a civil servant this, and most other occasions invented or otherwise, require cakes. So Jammy fairy cakes with icing and 100s and 1000s or chocolate strands have been made.

Breakfast

Now I really don't intend on blogging my breakfast everyday as I usually have the same thing - ready brek! Yes I know, central heating for kids and I'm definitely not a kid any more but it's great. It really sets me up for the day. The current incarnation involves topping it with sultanas, a generous teaspoon of honey and cinnamon.

Difficulty: Easy peasy!

Taste: simple but delicious

Calories: 300 kcal approx. (I make mine with oat milk but don't think it's that different from semi-skimmed cow's milk in terms of calories).

Cauliflower and broccoli cheese and jacket potato

As good a day as any to start this blog. I'm planning on blogging what I eat every day for a year. Some posts will be briefer than others. I will put recipes up when I get the chance but if you want one specifically then please ask and I will try and oblige.

A classic dish for an Autumnal day but with a slight twist. The cheese sauce was made with oat milk. I try and limit the amount of dairy I have as it causes me sinus problems. It was made with extra mature cheddar which gives a stronger flavour but you don't need to use as much. Also added a bit of broccoli to jazz it up!

Taste: delicious! That extra mature cheddar is something special mmm

Cooking difficulty: easy once you've mastered the cheese sauce

Calories: about 650
