Caramelised Red Onion, Tomato and Mozzarella Tart and Potato Salad

I have already made tomorrow night's supper as we are travelling down to London for the weekend. I went for a nice caramelised onion tart (which is more like pizza with a filo base) and some potato salad. Really looking forward to using the picnic set we had as a wedding present for the first time!

Only slightly over cooked!

    Thanks for your comments. The red onions make a delicious sweet base and it really is like a pizza.
